UltraViolet

Conceived by Paul Pairet for over 15 years, Ultraviolet is the first restaurant of its kind attempting to unite food with multi-sensorial technologies in order to create a fully immersive dining experience. A single table of ten seats only. A 20-course “Avant-Garde” set menu. Dinner unfolds as a sensory play choreographed by chef Paul Pairet and the Ultraviolet Team. Specifically equipped with multi sensorial high-end technology, the dining room is dressed-up by lights, sounds, music, scents… a cool air blow, an immersive projection, images and imagination… and food. Each course is enhanced with its own taste-tailored atmosphere.

Literally at the apex of Three on the Bund, the Cupola is a split-level space accessed via a winding rooftop staircase. The first level, which can accommodate eight guests, is ideal for an intimate dinner gathering for friends or colleagues. It comes equipped with state-of-the art audio-visual equipment ideal for screening films or presentations. The second level features Shanghai’s most discrete dining space. With a soaring domed ceiling, panoramic city views, and plush drapery, it offers an enchanting environment in which to enjoy a gourmet meal with a loved one. Guests at the Cupola enjoy the finest VIP treatment from the moment they arrive at Three on the Bund. A private butler greets guests at the street entrance and provides dedicated service for the evening. In addition, diners at the Cupola may select a meal from any of Three on the Bund’s restaurants – Jean Georges, Nougatine, Whampoa Club or New Heights. To enrich the experience, the Cupola can provide specialty items or services from any of these restaurants. For example, guests may summon a tea sommelier from the Whampoa Club to perform a traditional tea ceremony, or request specialty cocktails from Jean Georges Bar. Enjoying such exclusive treatment, it is no wonder that guests at the Cupola feel on top of the world.
