D.O.C's head chef Stefano Pace has more than 30 years of global experience in the kitchen and has a string of award-winning restaurant openings behind him. It was in Melbourne that he got his start as an apprentice in the prestigious Florentino’s. After a decade in the kitchens of Australia's best venues including Icebergs in Sydney and the Beach Hotel in Byron Bay, he then honed his cooking skills in Germany, Japan, India, Hong Kong and Rome, Italy, where he became Executive Chef at the Michelin Two-Star restaurant Gusto.

An endless variety of fresh ingredients, from the most exquisite salads and soups to sublimely prepared seafood, high quality meats and heavenly deserts. Danieli’s new menu offers a wider variety of choices; specialties such as Italian style “tropical” salad with extra virgin olive oil and lemon juice, Neapolitan seafood soup, risotto with Porcini mushrooms, marinated langoustine and cocoa powder, Linguine pasta with fresh lobster in a seafood-tomato sauce, pan seared treasures from the sea - lobster, scallop, and seabass, grilled Australian beef tenderloin decorated with fresh mushrooms Carpaccio and rosemary. The new dinner menu serves at Danieli’s every Monday to Sunday from 6:00pm to 10:00pm. The Shanghai Club (former club that occupied the current Waldorf Astoria Club premises) was famed for its Long Bar, an impressive 34m bar counter and longest in the Far East back in the early days of the 1910s. Today, the original Long Bar design is resurrected in this space, with every element of the bar and wall panelling carefully studied and reproduced from photographic records. Wei Jing Ge is a contemporary Chinese restaurant that features a collection of interesting Chinese reproduction antiques and art displays as if one has stumbled into a forgotten attic. The six private rooms are individually furnished and designed, with a dedicated lounge area and washrooms. Wei Jing Ge serves authentic Cantonese, Huaiyang, and Shanghainese cuisine, as well as the irresistible Dim Sum Brunch. The Master Chef Sam Yuen from Hong Kong has had over 25 years of experience in the field.
